Lemon Coriander Soup Recipe

Soup lovers, all over the world, it’s your time to rejoice! This quick and simple recipe can be your piping hot saviour on a cold rainy day. Have it as a light, refreshing dinner or a healthy yet satisfying meal, it won’t disappoint your taste buds. The chilli sauce adds just about the right amount of kick making this lemon coriander soup recipe even more appetizing.

Ingredients

4 cups of veg stock

2 tablespoons of finely chopped onions

2 tablespoons of lemon juice

2 teaspoons of chilli sauce

Salt as per taste

1 teaspoon of powdered black pepper

1 cup of coriander leaves



Instructions

Firstly, bring the stock to a boil.

Add the onions, lemon juice, salt, pepper as well as half of the coriander leaves.

Bring this mixture to a boil. Now, simmer for 1 minute.

Place the remaining coriander leaves in the serving bowls. Pour the soup over the leaves and serve hot.

Tip: To make the stock, you can boil carrots, peppercorns, onions, garlic, mushrooms, celery and tomatoesin

water for 15-20 minutes. Pour this mixture through a sieve and your stock is ready.

Alternatively, you can also choose to buy vegetable stock from leading food stores and super markets.
