The chilli sauce adds just about the right amount of kick making this lemon coriander soup recipe even more appetizing.Ingredients
4 cups of veg stock
2 tablespoons of finely chopped onions
2 tablespoons of lemon juice
2 teaspoons of chilli sauce
Salt as per taste
1 teaspoon of powdered black pepper
1 cup of coriander leaves
Firstly, bring the stock to a boil.
Add the onions, lemon juice, salt, pepper as well as half of the coriander leaves.
Bring this mixture to a boil. Now, simmer for 1 minute.
Place the remaining coriander leaves in the serving bowls. Pour the soup over the leaves and serve hot.
Tip: To make the stock, you can boil carrots, peppercorns, onions, garlic, mushrooms, celery and tomatoesin
water for 15-20 minutes. Pour this mixture through a sieve and your stock is ready.
Alternatively, you can also choose to buy vegetable stock from leading food stores and super markets.
